I, mr.hotsia, had the chance to stroll around the fresh market area and food streets in Mandalay. The aroma of spices, the lively calls of vendors, and the sizzling sounds of pans create an atmosphere that makes me feel Mandalay Burmese food is alive and uniquely flavorful.

The morning market in Mandalay is not like the typical morning markets in Thailand. Here you will find fresh vegetables, local fruits, and freshly cooked dishes made right in front of the stalls, with rich flavors and full Burmese-style spices. I wandered tasting and stopping to eat.Mohingaor fish noodle soup, considered a national dish and a favorite of Burmese people. Here they add special ingredients and a flavorful broth scented with turmeric and spices perfectly blended with freshwater fish.

The chicken pieces are tender, the dipping sauce is deliciously sweet and sour, and importantly, the price is very affordable. I ate until full and paid less than 50 baht.

Here, coffee is served as instant sachets brewed with hot water and sweetened condensed milk, with a unique sweet, creamy, and strong flavor. I tried sitting at a street-side coffee shop, watching people pass by, smelling food from hot grills mixed with fragrant coffee aroma. It’s a feeling that reflects the lifestyle of Mandalay people very well.
