Kengtung Green Papaya Salad: A Shan flavor you must try in Shan State
Many people may know Som Tam as a famous spicy Isan dish from Thailand, but if you have the chance to travel to Kengtung, a small town in Shan State, Myanmar, you will discover “Kengtung Som Tam,” a unique specialty of the Tai Yai people there. I, mr.hotsia, have experienced the flavors and lifestyle of this town and would like to share my detailed experience.
Kengtung is a town located in the eastern part of Shan State, also known as “Shan State,” where the Tai Yai ethnic group is the main community. The lifestyle here remains simple and rich in diverse cultures. I traveled from Tachileik by land route to Kengtung comfortably without a guide, as I described inTraveling to Kengtungwhich allowed me to fully experience the town’s atmosphere before tasting the Som Tam here.
How is Kengtung Som Tam different in taste?
Kengtung Som Tam is based on Shan-style Som Tam using green papaya as the main ingredient, but it differs in ingredients and a unique balanced flavor I have never encountered before. What impressed me was the freshness of the papaya, which was crisp and slightly sweet, mixed with roasted peanuts, fried shallots, and dried chili pounded together to create a spicy yet mellow taste. However, it is not as sour as the Som Tam we have at home.
Additionally, Kengtung Som Tam includes Burmese-style fermented fish or shrimp paste, different from Thai versions, which adds a fragrant and rich flavor to the dish. Importantly, they do not add too much sugar, so the overall taste emphasizes freshness and natural spiciness. I remember the first time I tried it was at a small stall in Kengtung’s town market, run by local villagers. The overall flavor reminded me of home but with a new twist at the same time.
Kengtung Morning Market: A hub for local ingredients and dishes
For those who love local food and fresh ingredients, the morning market in Kengtung is a must-visit. I, mr.hotsia, enjoyed strolling through this market filled with fresh vegetables, seasonal fruits, and local ingredients used in Tai Yai cuisine, including Kengtung Som Tam.
The market atmosphere was lively, with sellers and buyers chatting in the local language that I could somewhat understand. An elderly Tai Yai woman in traditional dress was pounding Som Tam with a large wooden mortar, filling the air with a fragrant aroma. I secretly tasted the Som Tam again there; the rich flavor made me order another plate.
Lifestyle and culture reflected through Kengtung Som Tam
Kengtung Som Tam is not just a dish but also reflects the lifestyle of the Tai Yai people in Shan State, who firmly preserve their traditional customs. I spoke with a Som Tam vendor who told me that making Som Tam is a family and community activity, symbolizing warmth and togetherness.
Moreover, during festivals such as the Tai Yai New Year, there are celebrations and joyful Som Tam feasts. Here, Som Tam is not just food but part of the culture and social bonds within the community.
Connecting travel and exploring other towns in Shan State
After enjoying Kengtung Som Tam, I also traveled to other interesting towns in Shan State, such as Hakha, which is located at a high altitude with cool weather year-round. When I visited, the temperature was about 15 degrees Celsius, giving a distinctly different atmosphere from Kengtung.Hakha TownThere are also ancient Chin houses to see, and I have written about my detailed experience in a previous article.
For those planning to travel to Kengtung, I recommend visiting Loikaw as well, which is not far away. I have written about my journey and experiences there inLoikaw, Myanmarwhich will help you experience the life and culture of the Tai Yai ethnic group from a broader perspective.
