Kengtung Dark Noodle: The original taste from the border town of Shan State

Kengtung, a small town located in Shan State, one of the states in Myanmar, is a place where I, mr.hotsia, had the opportunity to experience the local lifestyle and amazing local food. One of them is “Kengtung Dark Noodle,” which I want to share my firsthand experience of tasting and searching for street noodle shops here.

Many might wonder why it’s called “Dark Noodle.” When I arrived in Kengtung in the evening, the noodle shops turn on dim lights creating a warm and slightly mysterious atmosphere. The noodles here have a rich, dark broth similar to tom yum or pork bone soup that is simmered to a deeper concentration than anywhere else. Kengtung Dark Noodle doesn’t just refer to the color of the broth but to the secret flavor hidden in each bowl.

I saw a small noodle shop by the roadside with a large pot of broth set over the fire. The noodles come in thin and thick varieties. The main ingredients are pork or beef stewed until tender. The broth is dark black, different from any noodle soup I’ve had in Thailand.

When I, mr.hotsia, tasted it for the first time, I must say it was “intensely flavorful,” truly deserving the name Dark Noodle. The broth has a fragrant blend of various spices harmoniously combined, with a slight sourness from tamarind and a spicy kick from chili. The stewed pork is tender and melts in the mouth. The noodles are perfectly chewy, topped with fresh green onions and coriander for added freshness.

What makes Kengtung Dark Noodle different from noodles I’ve eaten in Thailand is the “black broth,” which comes from simmering many spices for a long time to create a rich and unique broth. Eating it feels like sipping the history and culture of the Tai Yai people in Shan State through this bowl of soup.
