When talking about the town of Hsipaw in Shan State, Myanmar, many may know it as a small town full of charm, with a relaxed atmosphere, the lifestyle of the Tai Yai people, and a landscape full of lush green mountains. But for me, mr.hotsia, my latest visit here was not just about strolling around the town or enjoying the peaceful nature, but also an opportunity to delve deep into the kitchen of the Palaung people, a minority group in this area, to learn how to cook simple yet flavorful local dishes filled with interesting stories.
The Palaung people in Hsipaw have a distinctive culture, and their food reflects a simple yet profound way of life, different from the Tai Yai or Chin people I have experienced in other towns of Shan State, such as Hakha, which I have written about in previous articles.Travel to HakhaThe weather there is cool and the people have a unique culture, but in Hsipaw, the Palaung people are characterized by their closeness to nature and cooking with fresh ingredients from the forest and local area.
Atmosphere of the Palaung kitchen in Hsipaw
That day, I traveled to the home of Palaung people located in a small community outside Hsipaw town. The kitchen atmosphere here is not modern or comfortable like in big city homes, but warm and filled with the aroma of local herbs and spices. The villagers use traditional wood stoves for cooking and mostly use earthenware or wooden utensils, truly blending with nature.
I learned that Palaung cooking emphasizes using locally sourced ingredients such as various wild vegetables, wild mushrooms, native herbs, and fish from nearby streams. Sticky rice is also a staple food for the Tai Yai and ethnic groups in Shan State.
Signature dishes I tried cooking and tasting
The dish that impressed me the most was “Palaung Herbal Curry,” which has a spicy yet mellow flavor from various local herbs like lemongrass, kaffir lime leaves, and galangal. Importantly, they add fish caught from nearby streams, giving a fresh and naturally sweet taste.
Another interesting dish is “Palaung Wild Vegetable Salad,” which uses cleaned wild vegetables tossed with fresh chili, lime juice, and local fish sauce. The sour and spicy flavors balance perfectly. Along with perfectly steamed sticky rice, eating these dishes gives a sense of fullness and harmony typical of hill tribe cuisine.
Impressions from experiencing local life and food
Being in the Palaung kitchen this time made me, mr.hotsia, feel like traveling back in time to experience a traditional lifestyle still preserved in some parts of Myanmar. It’s not just about eating food but learning culture, the relationship between people and nature, and preserving the most valuable things like local ingredients and herbs.
I also talked with the homeowner about the lifestyle of the Palaung people in Shan State, which is quite fascinating because this area is ethnically and culturally diverse.
