I, mr.hotsia, had the chance to travel to Taunggyi, the capital city of Shan State, Myanmar, which is one of the cultural centers of the Shan and Kachin people. This place is not only known for its nature and beautiful mountains but also full of rare local foods that are incredibly delicious in a way I have never experienced before.
On this trip to Taunggyi, I intended to seriously explore Shan and Kachin cuisine because these two ethnic groups are culturally and linguistically close, yet their food flavors are uniquely distinct and interesting. The fresh market in Taunggyi is the best starting point to learn about Shan and Kachin food. I strolled through stalls filled with fresh ingredients, including local vegetables, herbs, and a variety of meats. The charm of this market lies in the lively people speaking Shan and Kachin languages, with friendly bargaining and the fragrant aroma of spices that immediately whet your appetite.
Most restaurants in Taunggyi are small family-run places, but their flavors are anything but small. Shan cuisine is famous for using fresh herbs and balanced seasoning, whether it's rich chicken curry, Shan-style fermented fish chili paste, or perfectly steamed sticky rice. One dish that impressed me was “Kachin Beef Curry,” which has a balanced flavor with spiciness from fresh chili and the aromatic scent of ginger and garlic blending perfectly.

What I want to recommend everyone to try is “Shan Larb,” which is completely different from the Isan larb in Thailand. The taste is sour, salty, and slightly spicy, served with a variety of fresh vegetables. It’s very refreshing.
Another must-try is “Grilled Sticky Rice,” where Taunggyi uses steamed sticky rice formed into round balls and grilled over charcoal until fragrant, served with a spicy dipping sauce. Also, the Shan-style fermented fish chili paste is rich and intensely spicy. I tried it and loved it so much I wanted to bring some back to Thailand.
