Chiang Tung cuisine, the taste of home in Shan State, Myanmar

When talking about Chiang Tung, a small town in Shan State of Myanmar, many might not be very familiar with the name. But for me, mr.hotsia, who has had the chance to experience it firsthand, I must say Chiang Tung is a town full of charm in culture, lifestyle, and especially its “food.” Here, the flavors perfectly blend Northern Thai tastes with unique Burmese characteristics impressively.

Chiang Tung is located in the area known as “Tai Yai” or Shan State, where most locals speak Tai Yai language and have a culture very similar to Northern Thai people. This is evident from the food menus that have flavors and styles resembling khao soi, sai ua, or even crispy pork rinds. If you love Northern Thai food like me, I guarantee Chiang Tung will not disappoint.

Chiang Tung Local Food with Unusual Familiarity

If you want to start your day with simple local food, hotels in Chiang Tung usually serve noodles as a staple. But if you want more variety and richer flavors, I, mr.hotsia, recommend walking to the nearby morning market in town. There you will find various khao soi and noodle shops, both beef and pork, with rich flavors, chewy noodles, and fragrant, well-balanced broth just like eating in Chiang Mai. Even warm rice wrapped in banana leaves sold at street stalls made my breakfast very enjoyable.

For lunch, I like to stop by small roadside shops. Some sell “roti,” which is an easy-to-find snack that feels like sitting in a local market back home. The roti here comes in plain or filled with sweet or savory fillings, so you can choose as you like. If you visit Chiang Tung, you must not miss this dish.

Dinner at AZURI by Nong Tung Pond that impressed mr.hotsia

When it comes to dinner in Chiang Tung, “Nong Tung” is the central spot for restaurants catering to tourists and locals. With a relaxed riverside atmosphere and the sound of crickets at night that makes you feel at ease, I, mr.hotsia, recommend AZURI, a favorite restaurant in this area. This place offers a variety of Thai, Burmese, and local Chiang Tung dishes that are very delicious, especially the “crispy pork salad” which is crispy outside, tender inside, with a perfectly balanced sweet, sour, and spicy flavor. Paired with hot sticky rice, it’s the ultimate combination I will never forget.

Besides the crispy pork salad, AZURI also offers fried fish and sai ua with traditional aromatic spices. These dishes reflect the roots of Northern Thai food culture blended harmoniously with Burmese flavors here. Eating these dishes in the evening atmosphere of Chiang Tung reminded me of my previous trip to Hakha town in Chin State, which also has charm and interesting local food.

Stop to taste street snacks and fresh markets in Chiang Tung

While strolling around Chiang Tung, I, mr.hotsia, noticed many roadside food stalls offering a wide selection, including noodles, soy milk, khanom jeen (fermented rice noodles), and even freshly made crispy pork rinds sold on the street. Each shop has its unique character; some use special broth recipes simmered for hours, resulting in a naturally sweet and rich broth without MSG.

The fresh market in Chiang Tung is another place I highly recommend. Besides seeing the local lifestyle, you can find seasonal fresh produce and unusual local ingredients, including various native vegetables and herbs used in cooking. Here, you will experience the diversity of Tai Yai food culture that I have seen inChiang Tungand which connects with food in other Shan State areas like Hakha town, which I have documented before.

Summary of mr.hotsia’s Impressions of Chiang Tung Food

Every dish I tried had the fragrant spices of the North but with a unique identity unlike any other. Walking through markets or streets to find food is an experience that completes the Chiang Tung trip perfectly.
