Kyao Noodle, the delicious taste of Shan State, Myanmar

When talking about local food in Shan State, also known as "Tai Yai," a border town of Myanmar full of cultural and natural charm, Kyao Noodle is one of the dishes that mr.hotsia highly recommends without hesitation. On my latest trip to Shan State, a city I have previously described in an article,Haka Cityandthe journey to Haka CityI had the chance to taste Kyao Noodle at a small roadside shop in Yong, a town near Kengtung with a warm, simple lifestyle unlike the hustle of big cities. The Kyao Noodle here uses fresh, chewy noodles served with a broth simmered from pork bones and local spices, a secret recipe of the Tai Yai people, completely different from Thai noodles.

What makes Kyao Noodle unique is the "Kyao" — the use of local seasonings and herbs that provide a fragrant aroma and rich taste. It includes mildly spicy chili powder and fresh vegetables gathered from the area, such as pickled mustard greens, culantro, and fried shallots. A bowl of Kyao Noodle may look simple, but every bite offers a harmonious flavor and meticulous care from the Tai Yai people.

Travel and Atmosphere in Shan State

Traveling to Shan State is not easy for general tourists, but for mr.hotsia, I chose to travel from Mandalay to Kale (Kalaymyo) first, then took a bus to Haka City, the capital of Chin State nearby. Walking through the morning market, sipping hot tea, and eating hot Kyao Noodle is something I always remember when thinking of Shan State.
