Burmese Fried Rice in Taunggyi: A Local Flavor Not to Miss

Hello, I am mr.hotsia. I had the chance to visit Taunggyi, the capital of Shan State, also known as Tai Yai. Located on a plateau in Myanmar, this city is an important stopover before heading to Kengtung or other towns in northeastern Myanmar.

One thing that impressed me the most during this visit to Taunggyi was tasting the “Burmese fried rice,” which is easily found in morning markets or street stalls in the city. However, the taste and aroma of this fried rice are distinctly different from what I have eaten in Thailand.

Taunggyi Morning Market Atmosphere: A Hub of Local Culture and Cuisine

I walked into the morning market of Taunggyi, filled with lively conversations and the scent of spices. Fresh vegetables, colorful fruits, and goods reflecting the lifestyle of the Tai Yai people were everywhere. Some vendors spoke a bit of Thai, making communication easier.

A fried rice vendor explained that Burmese fried rice uses short-grain rice mixed with local spices and includes various side ingredients such as fried eggs, Chinese sausage, crispy pork belly, and fresh local herbs like green onions and coriander.

A Unique Flavor

Tasting the Burmese fried rice in Taunggyi, the first impression was the mild yet harmonious blend of spices that perfectly complemented the side ingredients. I, mr.hotsia, believe the key secret lies in the use of Burmese chili sauce and fish sauce, which have a different flavor from those in Thailand. Additionally, the cooking oil used has a distinctive aroma that prevents the rice from being greasy.

On the day I visited, I saw the Burmese fried rice selling out quickly in the morning, from tourists to locals heading to work or school. It is a daily breakfast that is filling and economical.

Firsthand Experience: Burmese Fried Rice from mr.hotsia’s Perspective

During that trip, I met an elderly owner of a fried rice stall near the morning market. He told me that this recipe was passed down from his parents, using locally grown highland rice, which gives the rice a unique aroma and flavor.

I traveled with a camera and recorded video footage. Anyone interested in seeing the process of making Burmese fried rice in Taunggyi clearly can watch it atBurmese Fried Rice in Taunggyi Taunggyi foodwhich I have uploaded on my own channel.
