Some say it's impossible, but this is history. The truth is, Kalae Mae is a traditional Thai dessert loved by everyone, including me. I've loved Kalae Mae since I was a child. When I go to make merit at temples, I always look for Kalae Mae first. I visited Chiang Kham and found a house with a sign saying 'Ancient Kalae Mae'. I went in immediately. This house is a group of Don Chai housewives in Chiang Kham District, Phayao Province, supported by the Chiang Kham Subdistrict Administrative Organization, making OTOP sweets.
They started selling several years ago and it worked well. Everyone loved it and became addicted, leading to expansion into the Ancient Kalae Mae House as shown in the picture above. I remember my mother saying making Kalae Mae is difficult. You have to steam sticky rice, then stir it into dough, add coconut milk, and stir, stir, stir for about a full day until the Kalae Mae becomes perfectly sticky. Nowadays, there might be machines for stirring, but I'm not sure. At the Ancient Kalae Mae House in Chiang Kham that I saw, they had already finished stirring.
They put it on trays while still hot. The aroma is indescribably fragrant. I wanted to eat the whole tray by myself, mouth watering. After the Kalae Mae cools on the tray, it is cut into pieces, wrapped in plastic, and finally wrapped in banana leaves. When I talked with the housewives, they gave me some to taste. They said the best part is the crunchy bits stuck to the bottom of the pan. I tried it and it was really delicious. Now, whenever I eat Kalae Mae, I look out for those crunchy bits.
I think I need to return to the Ancient Kalae Mae House just to enjoy those crunchy bits. For those interested in authentic ancient Kalae Mae, I believe I've never tasted better anywhere else. This whole tray is what I want to eat all by myself. Extremely delicious. The Kalae Mae cut into pieces, especially the crunchy parts I love. First cut into long strips, then gradually into small pieces, dried to cool before wrapping in plastic and banana leaves.
