Phayao province is a newly established province with many newcomers, so dinner often relies on made-to-order food at the night market. The moat-side market offers Pad Thai, fried mussels, made-to-order dishes, and is always bustling. Today, I planned to find a Pad Thai shop to film a cooking clip for YouTube and found the shop shown above. They put great care into their cooking. The clip is below. Actually, Phayao has another delicious Pad Thai shop with a queue called Uncle Dam's shop.
He has been selling for a long time. This shop is easy to find; he uses strong charcoal fire. Just watching him make Pad Thai is worth the trip to Phayao. Besides made-to-order food, there are many delicious grilled pork shops in Phayao. If you go to Phu Chi Fa, you can stay here and wake up early. I also stayed here and woke up at 3 AM to catch the sunrise. From Chiang Kham to Ban Huak is just over 30 kilometers. Mr.Hotsia says watching the Pad Thai being made is worth it. Win Hoteng is cheap, good, and has WIFI.
