When talking about breakfast for Khon Kaen locals, the first thing I think of is “Jok, Jub, Sen,” three simple dishes with charm and unique flavors. If anyone visits this province in the morning and doesn’t try these dishes, I think it’s like not really coming to Khon Kaen.

I, mr.hotsia, often travel to Khon Kaen, and one of my favorite things to do is to tour local breakfast spots. I don’t focus on fancy or expensive restaurants but on small local shops popular among locals. The Jok, Jub, Sen stall in the morning market in front of the Agricultural Products Central Company is my target on many mornings.

Getting to Know Khon Kaen’s “Jok, Jub, Sen”

The jok here is not the ordinary kind you usually see. It’s rice porridge cooked until soft and smooth, with offal, minced pork, and silky pork blood, served with a perfectly soft-boiled egg. Each bowl looks appetizing and tastes rich.

As for “Jub,” it is a thick, flavorful noodle soup with offal, minced pork, and pork blood as the stars. I’ve tried many places, but this stall’s broth has a fragrant hint of spices and is not too oily, making it easy to eat without feeling greasy.

“Sen,” or what is called “Tom Sen,” is glass noodles boiled in a broth seasoned like pork blood soup. Its taste and preparation differ clearly from Khao Piak Sen of Vientiane or Bueng Kan. In Khon Kaen, the noodles are white glass noodles cooked in a rich, spicy broth typical of authentic Isan style.

Morning Atmosphere and Lifestyle at Khon Kaen Morning Market

The stall I visit is located in a moderately sized morning market but very crowded, with queues for both takeout and a few small tables seating about 4-5 people arranged by the owner. The small stall is run efficiently by two people each morning.

I really like this atmosphere. It makes me feel like I’m truly experiencing the real life of Khon Kaen locals, not just passing through as a tourist or eating in a well-decorated fancy restaurant.

Every time I sit down to eat jok with a soft-boiled egg at this stall, I add seasoning sauce and fresh ginger provided by the shop to my liking. The flavors blend perfectly, and in this simplicity, I feel happy every time I eat.
