Grilled Eggs Inside Birds in Cà Mau, Vietnam: A Unique Local Delicacy from the Southernmost Region

If you are someone who loves to explore new flavors and is fascinated by local lifestyles, I, mr.hotsia, will take you to experience a unique dining adventure in Cà Mau province, the southernmost part of Vietnam. Besides the peaceful nature and fresh markets full of choices, there is a dish I have never encountered anywhere else called “Grilled Eggs Inside Birds,” which is a specialty of this area. I tried it myself and am sharing a genuine story from the field.

Cà Mau province is a city rich in stories and local culture deeply intertwined with the lives of people living along canals and the Mekong River. I arrived in Cà Mau city by passenger boat, which is a more interesting and recommended way to travel than by car (read more atCà Mau Boat Station). After strolling through the Cà Mau fresh market, where you can truly see the local way of life (read atCà Mau Fresh Market), I was drawn to a type of food sold from a street cart called “Grilled Bird,” which at first seemed ordinary.

But when I looked closer, I found something very interesting: the bird’s belly was unusually swollen. Upon closer inspection, I saw eggs stuffed inside the bird’s belly before grilling. I asked the vendor and learned that there are two main types of grilled birds here: one stuffed with duck eggs and the other with button quail eggs. For the button quail eggs, they are first placed inside a small tomato before being stuffed into the bird’s belly. This grilling technique is something I have never seen anywhere else.

As for the taste, I must honestly say it’s not a dish I would crave to order again, but it was a valuable experience to try. The grilled bird with eggs has a soft, tender texture and a slightly sweet flavor, which might not appeal to those who prefer strong flavors or firm meat. However, if you enjoy trying new things or want to discover the unique cuisine of the Mekong Delta, Cà Mau is a fascinating destination.

Besides the grilled eggs inside birds, Cà Mau also offers other local dishes worth tasting, such as freshwater turtle meat, which is famous in the area (though I haven’t found a place to try it yet), and the lively local lifestyle that still revolves around boat travel and bustling floating markets.

For those who want to visit Cà Mau, I recommend taking the passenger boat service here to truly experience the Mekong Delta atmosphere.
