When I opened the window, I saw the image of Lạng Sơn city in the early morning slowly waking from silence. The streets gradually became lively. The aroma of breakfast floated to my nose—a scent I will never forget from this trip. Not far from my accommodation, there is a morning market calledChợ Đông Kinhwhich was my first destination this morning. I wandered through stalls selling fresh vegetables, fruits, and a variety of local foods. Here, I witnessed the lively trading of the locals—vendors and customers happily choosing their goods.

What caught my eye was a noodle dish called “Bún Cá” — noodles with fried fish and water hyacinth. Thin white rice noodles topped with crispy fried fish and fresh vegetables perfectly prepared. It’s a refreshing and satisfying breakfast. I made sure to remember this taste because it is the true local eating experience in Lạng Sơn.

If I were to mention what Lạng Sơn is most famous for, it would be “Lạng Sơn Roasted Duck,” which I tasted that morning. The roasted duck here is different from the MK-style roasted duck we have at home but has its own unique charm that is very addictive. I researched and found that the duck’s stomach is stuffed with the Chinese star anise leaf, called “Mắc mật” in Vietnamese, grown in northern Vietnam, southern China, and Nan province in Thailand.

Lạng Sơn roasted duck must be eaten hot; otherwise, the deliciousness decreases significantly. I chose to eat from a street vendor who had just finished roasting. After a satisfying breakfast, I went up to the top floor of the Hoang Son Hai Hotel to enjoy the city view from above. Lạng Sơn city in the morning gradually came back to life.
