I have tasted it and found it very delicious. The flavor is a mix between sausage and northern Vietnamese sausage varieties like Nem Chua or Ham, not salty, very tasty.

This is a unique specialty found only in Cao Bằng Province. It resembles flatland sausages but has a slightly different flavor with a smoky aroma. The traditional homemade method involves hanging the sausage in the kitchen to smoke for about three months before frying or grilling. It has a distinctive taste unique to Cao Bằng. The main ingredients include shoulder, thigh meat, beef or pork, spices, and pig heart which is thoroughly cleaned multiple times.
In the final cleaning, the pig heart is soaked in dry alcohol and marinated with spices before being stuffed into the casing. Usually grilled or fried and eaten with sticky rice. I believe many Thai and Tai people live in this city, and this is one of their traditional food preservation methods in the cold climate.
