For me, papaya salad, or "Tam Som" as called by the Lao, is a favorite dish. Lao papaya salad generally differs from Thai papaya salad in ingredients and preparation methods, especially the fermented fish sauce (pla dak) which is usually steamed first to enhance its aroma and flavor. However, in Xaignabouli, I noticed they use fresh fermented fish without steaming, which makes the papaya salad taste fresh, sour, and spicy perfectly balanced.
I tried papaya salad at a market in Xaignabouli town, a small but lively market selling local food and fresh vegetables. There, I ordered papaya salad without sticky rice flour (plao nua) as recommended by the vendor. Usually, I avoid sticky rice flour because it can make the salad too sticky, but here they didn't add any. The flavor was bold, spicy, and sour just right. What I liked most was eating it with grilled pork ribs with just the right amount of fat. The tender grilled pork combined with the rich papaya salad made it an unforgettable meal.
