Xaignabouli Food: Lao Cuisine of Xaignabouli Province with Experiences from mr.hotsia
When talking about Xaignabouli Province, Laos, many might imagine the complex mountain landscapes, the vast Mekong River, and the peaceful rural towns. But if you travel here yourself as I, mr.hotsia, have done, you will find that the food here has its own unique charm. It’s not just a quick stop to eat but a delicious experience that truly reflects the lifestyle and culture of the authentic Lao people in this province.
My journey this time began atXaignabouli Bus Stationthe main city of Xaignabouli Province. I spent time traveling by car from Muang Ngeun, passing steep mountainous roads with dozens of curves until reaching here. Although the journey was not easy, the scenery along the way and the anticipation of local food filled me with excitement.
Local food at Xaignabouli morning and evening markets
The morning and evening markets in Xaignabouli are where I spent time exploring and tasting many local dishes. The morning market is full of fresh vegetables, fermented fish (pla dek), sour fish (pla som), and fermented fish sauce (pla ra), which are the heart of authentic Lao cuisine. The aroma of pla dek roasted with spices made me unable to resist trying it immediately. Here you will find “Kua Pla Dek” which I recorded inthe pla dek roasting videoa dish very popular among the Lao people in Ban Tha Suang (Hong Sa town) along the Mekong River.
There is also a fragrant fried fermented fish with fried egg dish with rich, rustic flavors, which I saw a Lao woman from Hong Sa preparing in the videoCruising Laos 10which clearly conveys the simplicity and traditional deliciousness.
Lifestyle and food of the Tai Lue people in Xaignabouli Province
Xaignabouli Province is not just Xaignabouli city. I also had the chance to visit Hong Sa town, about 30 kilometers from Muang Ngeun. Here is a Tai Lue community that strongly preserves its cultural identity and cuisine, which I wrote about in the articleVisiting Hong Sa town, Xaignabouli ProvinceandHong Sa Morning Market
I remember the morning market in Hong Sa was bustling with fresh vegetables, fermented fish, dried fish, and many other local foods that are rare elsewhere. It felt like stepping back in time to an ancient market that has perfectly preserved its traditional character.
Homestay and local food by the Mekong River
Another memorable experience I had in Xaignabouli Province was staying at a small homestay in Ban Tha Suang by the Mekong River, a village with about 100 people. Here I ate truly local food including sticky rice, freshly caught Mekong River fish, and seasonal local vegetables. The accommodation cost only 200 baht per day including three meals, which is very affordable considering the experience.
Khun Phi Porn, the homestay owner, took me fishing in the Mekong River with a traditional net called “mong,” an activity that helped me understand the lifestyle and fresh food of the locals better. Every dish was not just about taste but full of stories and a deep connection to this land.
Routes and travel to Xaignabouli Province
For those interested in visiting Xaignabouli Province, travel has become much more convenient, especially if you cross through the Huay Kon border checkpoint and Muang Ngeun, a border town with bus stations connecting to many cities in Xaignabouli. I wrote about the journey inVisiting Muang Ngeunwhich I recommend arriving early to cross the border and start your adventure in authentic Laos.
From Muang Ngeun, you can easily continue by bus to Hong Sa or Xaignabouli city, and also travel onward to Luang Prabang or Vang Vieng. I once took a bus from Xaignabouli to Luang Prabang, which took about three and a half hours, passing a ferry crossing at Ban Tha Duea, a very memorable travel experience.
