Pho Houay Sai: A hot breakfast that I, Mr.Hotsia, have to wake up early to taste in Bokeo Province, Laos

When it comes to traveling in Laos for me, Mr.Hotsia, one thing that cannot be missed is experiencing authentic local food. For the morning in Houay Sai village, Bokeo Province, I want to share my eating experiencePho Houay Saior Lao-style Vietnamese pho with a unique charm that makes me intentionally wake up early to taste it every time I come here.

Houay Sai is a border town located opposite Chiang Khong, Chiang Rai Province. Crossing the Thai-Lao Friendship Bridge, not far away, you will find the relaxed atmosphere of this small town. There is a morning and evening market that I have written about in the articleMorning and Evening Markets of Houay Sai Peoplewhich is a great starting point to experience the daily life of authentic Lao people. It is also here that I found a hot pho stall where people stand and eat by the roadside.

The Origin and Charm of Pho in Laos

For those unfamiliar, Pho is a traditional Vietnamese dish originating from northern Vietnam, featuring a flavorful hot broth simmered with bones and spices to create a distinctive aroma. It is said that pho broth was influenced by the French during the colonial era before being adapted in taste according to the culture and ingredients of each region, becoming a staple breakfast or lunch in Vietnam and neighboring countries like Laos.

In Laos, pho has been adapted to suit the geography and local preferences. For example, in Houay Sai, the vegetables used differ from Luang Prabang or Huaphan Province, often including water spinach or bean sprouts to add freshness and crunch based on local availability. I, Mr.Hotsia, noticed that the pho here has a rich, not overly sweet or greasy flavor, perfectly suited to the cool morning weather and the local fresh market walking activities.

Eating Experience of Pho in Houay Sai

Finding a place to eat pho in Houay Sai is not difficult. I once strolled through the morning market about 2 kilometers from Houay Sai town, locally called “Lak.” This market is filled with many small food stalls. I usually choose roadside stalls with many customers coming and going, as it indicates the taste won't disappoint.

I clearly remember once after a 10-minute tuk-tuk ride from town (standard fare 10,000 kip or about 40 baht), arriving at a pho stall with a clear broth simmering in a small hot pot on a stove. The aroma of spices and added shrimp paste was distinctive, making it hard to resist. I ordered a large bowl at a very reasonable price of about 40 baht (the same price as the Lao beer I recommended in theLao Beer Article)

The noodles in that bowl were perfectly chewy and soft. The broth was flavorful and hot, served with thinly sliced beef and fresh vegetables provided for self-serving, including coriander, green onions, and lime. After seasoning with shrimp paste and bird’s eye chili, I, Mr.Hotsia, felt the taste was rich and balanced like nowhere else, making every morning in Houay Sai a memory I want to revisit.

Connecting Travel and Local Culture

Besides the pho that I love, Houay Sai is also an important connection point that allows me to travel conveniently to other towns in Bokeo Province, such as taking a bus fromHouay Sai Bus Stationto Luang Namtha, about 195 kilometers away, taking around 4-5 hours. The fare is not expensive at 55,000 kip (about 220 baht). I, Mr.Hotsia, once chose the afternoon trip because I was too lazy to wake up too early.
