It is common in Laos for bus stations to be outside the city, so to get there you need to take a tuk-tuk, which has a standard fare of 10,000 kip or about 40 baht.
I really enjoy walking through the fresh morning market in Huayxai because it is the heart and life of the locals. The morning market here is full of fresh vegetables, local fruits, and traditional foods that are hard to find in big cities. Besides seeing the real lifestyle of Lao people, you can also try unique local snacks and drinks. Mixed Pho - A Homestyle Flavor You Must Try
After exploring the market and strolling around Huayxai town, I found a mixed pho restaurant recommended by locals. This restaurant is located in a community near Bokeo town. The atmosphere is simple, but the aroma of the boiling pho broth is very appetizing.
The pho here is different from the Vietnamese pho we are familiar with. It blends local ingredients with Lao flavors, such as fresh herbs like culantro, green onions, and fresh lime juice to add a perfect fragrance and sourness. I ordered the mixed pho with fresh beef, boiled beef, and beef meatballs, served with fresh bean sprouts, dried chili, and fried shallots.
The broth is rich but not too salty, balanced with the sweetness from well-simmered beef bones. This mixed pho made me recall my trip to Vietnam when I tried authentic pho. Also, if you have more time, I suggest taking a boat to Don Sao Island nearby.
