Ban Pak Ngum Homestay The food of Xayaburi people, in my opinion, is not much different from Northern Thailand. From what I have seen, the number one famous dish is Tam Bak Hung or Lao-style papaya salad from Xayaburi. The Lao-style salad here is delicious because it includes fermented fish sauce or nam pa dek which is very flavorful. The word 'nua' in Lao means delicious. Even when I supervised the salad making, they did not use MSG (nua powder), it was still delicious without change. Tam Xayaburi sold in the Xayaburi market can be located from the photos I took.

When eating Lao-style papaya salad, after it is made, they will let us taste it. If it’s okay, they continue; if not, they adjust to your liking. For example, when they let us taste it. My second favorite is Jin Som or fermented pork sausage in the Xayaburi morning market or morning markets in Tad Yen, Hongsa, Pak Pai. If you look around, you will definitely find Jin Som. That kind of Jin Som is eaten fresh without cooking to be delicious. If anyone wants to stir-fry it, that’s fine; stir-fried with red ant eggs is also delicious. For Mr. Hotsia (www.hotsiacom), I like to eat it with hot sticky rice. The shop I like is in the Xayaburi market.

It is sold only near the som tam (papaya salad) shop in the morning; if you come late, it will be sold out. The third favorite is dishes in the Mok family (steamed wrapped dishes). I especially like Mok Tun the most. Mok Tun is sold at 10,000 kip per bundle or 40 baht. There are Mok Tun, Mok duck, Mok fish, Mok fish eggs, and pork Mok. I like Mok duck the most, but on the day I went to Xayaburi, I didn’t find it, so I ate Mok Tun instead. There are also other Mok dishes like Mok chili, depending on your preference. But Lao Xayaburi makes them delicious, I admit. I recommend buying northern sticky rice, fermented pork sausage, and Mok dishes to eat in the hotel.

When I traveled, I bought food to eat at the Chai Anan hotel. If you are in another town, you can do the same. If you are in Hongsa, sit at a shop next to the market and watch the people of Hongsa walking around buying things; it gives a nice atmosphere. There are many other delicious foods in Xayaburi, but I have not discovered or tried them all, or some did not suit my taste because I was not familiar with them. For Mr. Hotsia, the word delicious means familiarity with the taste you have experienced. If you can compare similarities and differences, it can be delicious in another way. Therefore, the word 'not delicious' should not exist; it should only be 'unfamiliar to the palate or taste.'
