I have traveled to many places in Laos and love eating papaya salad, which Lao people call "tam som" the most. Finally, I found a papaya salad I really liked at Chaiyaphum market. Even when I asked for it without added starch, it was extremely delicious. Eating it with grilled fatty pork ribs made it even more delicious. I would say this is one of the most delicious Lao papaya salads. Usually, Lao papaya salad in Thailand includes fermented fish sauce but is cooked by steaming first. However, in Chaiyaphum, I suspect they do not steam it first, which makes their papaya salad very tasty.
