I recommend a delicious and clean restaurant open at night called Sanga, which sounds like a barbershop. It’s popular with tourists and local Lao people.
The made-to-order dishes follow Lao style, for example, larb includes bean sprouts. Overall, it’s delicious. Along the street, there are pho shops, grilled chicken, and grilled fish. A famous Xieng Khouang dish I found in the market is fermented fish, sold at many morning market stalls. I buy it and ask the curry rice stall to fry it for me. They fry it very appetizingly with fried shallots, garlic, and dried chili sprinkled on the fermented fish. Eat it with hot steamed rice. I really like it.
