Unique noodles in Lạng Sơn: A flavor Mr.Hotsia must try in northern Vietnam
I, Mr.Hotsia, had the opportunity to visit Lạng Sơn province, a border town in Vietnam not well known among Thai tourists. But for those who love food and adventure in local flavors, this place is truly a paradise. Especially the noodles, which I call unique noodles because Lạng Sơn has noodle recipes clearly different from elsewhere, both in ingredients and interesting cooking methods.
The noodles I refer to are “Bún Cá” or simply fried fish vermicelli noodles served with fresh water hyacinth, a local vegetable I only discovered here. Water hyacinth is unlike any vegetable I’ve eaten in Thailand; it’s crisp and refreshing, perfectly balancing the richness of the fish. The fish used for frying is not ordinary fried fish but a local fish with firm flesh, fried until crispy outside and tender inside. The clear broth, fragrant with natural herbs, is so delicious that it needs no additional seasoning and you’ll want to finish the entire bowl.
The atmosphere of eating noodles here is another aspect that impressed me. Most noodle shops are small roadside stalls in alleys near the morning market.Chợ Đông KinhThe market is full of local vendors and fresh food. I once sat eating noodles while watching the morning life of Lạng Sơn people, listening to conversations, vendors calling customers, and the faint scent of spices in the air. It’s an experience hard to find in big cities.
The uniqueness of Lạng Sơn noodles and food I discovered
From my experience in Lạng Sơn, I found that this type of noodle usually includes water hyacinth, a plant found only in this area. Besides its novelty, the flavor is rich and unlike anything I’ve encountered before. The crispiness of the fried fish is enhanced by broth simmered from fish bones and local herbs, resulting in a naturally sweet and mellow soup.
Besides noodles, the dish I don’t want you to miss isLạng Sơn Roasted DuckFamous in this city, the duck is roasted until the skin is crispy but the meat remains tender and not dry. The duck’s cavity is stuffed with Chinese star anise leaves, known locally as “Mắc mật,” a herb grown in northern Vietnam, southern China, and Nan province of Thailand. I also recently learned that these leaves have dandruff-treating properties. The roasted duck is eaten hot only to enjoy the best flavor; once cold, much of the deliciousness is lost.
For accommodation in Lạng Sơn, I recommendHoang Son Hai HotelAn 8-story hotel where I stayed. The rooms are affordable, about 600 baht, but offer beautiful city views from a high vantage point, especially in the morning and evening when you can see the city and lake.Lang Son LakeClearly, the hotel is close to the market and many restaurants I tried, making traveling and dining in this city very convenient.
Flavors that impressed me and stories from Lạng Sơn streets
Speaking of street food I encountered in Lạng Sơn, besides the fish noodles I mentioned, there is also raw egg soup that I tried and really liked, which I documented inRaw Egg Soup ArticleThis soup uses only the egg yolk floated on a sweet and mellow broth. The yolk floating on the surface gives a smooth and delicate texture without any fishy smell. It’s a must-try dish if you visit Lạng Sơn.
If you like trying new things like me, Mr.Hotsia, I recommend tasting all the dishes here, especially the fish noodles I described, as they truly reflect the lifestyle and culture of Lạng Sơn people. And don’t forget to stay at a tall hotel like Hoang Son Hai to enjoy city views and delicious Vietnamese fried rice at the restaurant next to the hotel, another unforgettable experience for me.
