I never saw this style of Nem Nuong when traveling in northern Vietnam.
I believe the Nem Nuong we eat in Thailand comes from southern Vietnam. The Nem Nuong here is similar to ours. The difference is that I didn’t see them dip the thin rice paper in water. The vegetables here are limited, with raw banana as the star. The Nem Nuong pork is shaped and grilled on skewers one by one. The vegetables are cut long, about 2 inches, and wrapped with the rice paper. I tasted it and liked it very much. The grilled pork is fragrant and delicious here in Can Tho.
There are two more dishes I recommend: grilled pork wrapped in betel leaves, which you can find in dozens of shops all over town, nearly 10 just on the walking street. I tried it and found it delicious, grilled with a sweet flavor right on the street. Another dish to try is sticky rice topped with fried chicken. Honestly, I haven’t tried it yet because I’m always full when I want to eat it, but the portions are generous. On the walking street, you get hot sticky rice with fried chicken.
