Hello, I am mr.hotsia. Today, I will take you to experience the local flavors that impressed me the most in Xaignabouli Province, Laos. This is “Jin Som,” or what Thai people call authentic Lao-style fermented pork. I tried it twice here, and I can say it’s truly extraordinary.

The journey from Muang Ngeun, which is not far, takes about three and a half hours through mountainous roads and beautiful natural scenery, making the trip not too tiring. Upon arriving in Xaignabouli town, I found a lively morning market full of local food stalls.

Xaignabouli Jin Som: Deliciousness from a 24-hour fermentation

Jin Som here is not just ordinary fermented pork but a special recipe of the local Lao people in this province, freshly fermented for only about 24 hours. The shop I like sells only in the morning because the flavor is freshest then and highly demanded by locals, so it sells out quickly.

This shop is located in the Xaignabouli morning market. If you enter from the main road, it’s on the right before the building with several som tam (papaya salad) stalls. The sign is the fragrant smell of chili-marinated pork that hits your nose as you approach. I couldn’t resist ordering one basket of Jin Som sprinkled with dried chili and fried shallots, eaten with hot sticky rice and Mok Tun from the same shop, making a perfect and unforgettable breakfast.

The morning market in Xaignabouli is unlike typical markets in big cities. It’s filled with the atmosphere of a small community still living simply. Most vendors are locals selling fresh goods, vegetables, pla dek (fermented fish), and local seasonings. It reminded me of morning markets in Northern Thailand that I have visited many times.
